Leftover Thanksgiving Turkey Chili

This is an Ali original I made tonight. I thought I'd better post it quick before you eat all your turkey leftovers! This recipe makes enough for 2 and some leftovers. So if you've got a family of more than two who eat solid food, you might want to double this.

White Turkey Chili

1 tbsp olive oil
1 tbsp butter
1 small red onion, finely chopped
1 small green bell pepper, finely chopped
½-1 jalapenjo, seeded and finely chopped (optional)
1-2 cloves minced garlic
1 tsp salt
1 tsp pepper
1 tsp cumin
½ tsp chilli powder
2 tbsp flour
1 can chicken broth
1 ½ C corn (get the sweet frozen corn from Costco, it’s THE BOMB)
2 cups shredded turkey
1 can of white beans, rinsed really well

In a large soup pot heat olive oil and butter over medium heat. When butter is melted add onion, pepper and jalepenjo and sauté until onion is translucent. Add garlic, salt, pepper, cumin and chilli powder and cook for a couple more minutes. Add the flour and stir to coat the veggies. Add the chicken broth and wisk the mixture well. Add the corn, turkey and beans and heat through. Serve with cornbread or rolls.
